Vegan Day 1
Today was the first day of my vegan journey. The past week or so I've been practicing by eating vegan breakfast and lunch but then eating a regular dinner. Well, that ended today. This afternoon I went to Whole Foods and stocked up on things like couscous, dry lentils, quinoa, spices, things like that. For breakfast I had oatmeal with peanut butter. Then for lunch we had hummus on pita rounds with tons of veggies. I had an apple with peanut butter for a snack and then made something that looked like the above. It had sweet potatoes, tons of spices, red lentils, garbanzo beans, black beans, onions, garlic and ginger. I did have to cheat a little bit because I forgot to get vegetable broth so I had to use the chicken that we had. Small detail. It was really good. Even Hubby liked it. So Day 1 was a total success. One thing I don't understand though. I know that some vegans are fat and I'm not sure how that is possible. I ate 1/2 a bowl of that stew with 1/2 an avocado and I'm stuffed. Stuffed, I tell you. Stuffed. Which is great, I just don't understand how they can get fat. They must eat the stuff that is technically vegan but definitely not good for you. Oh well. I'm off now, Hubby and I are going to watch a movie.
